Strawberry Cornmeal Crumble Bars

Strawberries are cheap and local this time of year, so I modified a recipe from April's issue of Everyday Food. They taste like strawberry poptarts. Mmmmm. Not for the faint of calories. Can be made vegan by using Earth Balance instead of butter.



Ingredients:
3/4 cup almonds or other nut of choice
1/2 cup yellow cornmeal
2 cups flour
3/4 cup sugar
1/2 tsp coarse salt
3/4 cup Earth Balance or butter
3 cups rough chopped strawberries


1. Preaheat oven to 350°. Line an 8" square baking dish with parchment paper, leaving 1 in overhang on 2 sides.
2. Ground nuts in blender or food processor to create a flour texture. Mix together all ingredients except strawberries. You may have to use your hands to mix the Earth Balance/butter evenly.


3. Press down almost all of the crumble mixture into the pan... reserving 1 cup for topping. Top with an even layer of strawberry chunks. Top with the remaining crumble topping. Bake 35-40 minutes or until lightly browned on the edges. Allow to cool before removing from pan and cutting into bars. If desired, serve warm with a side of vanilla ice cream.
